MEAL 1: FAMOUS CARROT SANDWICHES AND FARRO SALAD!
– Fluffy house pita bread
– Roasted Brookford Farms carrots
– Whipped feta sauce
– House habanero-carrot sauce
– Green cabbage lime slaw
– Crispy fried farro (ancient grain) topping
You build our buffalo chicken-inspired Carrot Sandwich,then enjoy with a hearty farro, lemon, feta salad. Total prep time: 7 minutes
MEAL 2: FLOWER-SHAPED PASTA, SPRING PESTO, BROOKFORD FARM RADISHES 2 WAYS
– Semolina gigli (Tuscan lily-shaped variety)
– Spring pesto
– Slow-roasted green meat radishes
– Slow-roasted purple starburst daikon radishes
– Pickled rainbow radishes
– Pecorino cheese
Simply cook the pasta, warm the roasted radishes, and toss everything together. Total prep time: 15 minutes.
MEAL 3: FARRO MUSHROOM SOUP, FARM SALAD, ROMESCO ON PITA
– Farro mushroom soup
– Hearty farm salad
– Orange-honey vinaigrette
– Pita bread
– Romesco sauce
When we surveyed meal boxers a while back, Romesco (a Spanish red pepper dip) came back as a favorite item. Simply warm the soup, dress the salad, and dip the pita into the romesco to your heart’s content. Total prep time: 5 minutes.
SNACK: SPRING DUG PARSNIP FRITTERS
(Better than Dunkin donut holes)
Michael Docter’s Spring Dug Parsnips get grated and folded into a pillowy batter and dusted with cinnamon sugar. Back at the food truck when Twitter was new, I used to tweet “I have parsnip fritters” and sell out of them even before the first batch had hit the fryer. I recommend hiding these fritters from your family and enjoying them with your morning coffee.
DESSERTS: LAVENDER SHORTBREAD & PISTACHIO HALVA
