The syrup on the left is unfiltered, the one on the right is filtered. I never knew syrup was filtered until my most recent trip to South Face Farm. Wild hunh? So what are they filtering? The sap has a ton of minerals when it comes out of the tree, and that’s what they are filtering out.
Tom told me that he sells unfiltered syrup to one customer a year. The rest like it clear, which is why he runs it through the filter. Now I’m sort of curious to try it unfiltered. More pictures after the break.
