It’s often called celery root. Probably for that reason. I think they look like creatures from a Jim Henson creation. Awesome, hunh?
They are a root vegetable, just not commonly used. You can bake them (like potatoes), you can use them for gratins, soup, mash them. We got these from our friends at Lindentree farm, and we made soup with them. Unreal. Those of you who said you loved that soup you had, but didn’t know what it was. This was it.
Quick facts about Celeriac: unlike most root vegetables, it’s low in starch. Don’t bother trying to peel that skin, it’s too tough. You’re going to have to pull out a knife.
