Zack called me over the other day when he was cutting up roasted beets for salad. He’s been letting me know any time he’s prepping something with an amazing color so I can snap a picture. The rhubarb agua fresca the other day was fluorescent, and yesterday the beets were rocking.
The only problem when we prep beets is that they destroy our white countertops. So whenever see a bright pink countertop, that’s a hint for you what salad we’ll have that day.
