Right when I finished the final bite of my Apple Box last year, I started to think about when I could order it again. I love apples in the fall, but when I’m meal-planning, I usually opt to just pack the apples as they are—crisp, round, and raw.
The Apple Box opened my eyes to using Apples as an ingredient. Turnip and Apple Soup, made from perfectly crisp Bolton Orchard apples and spicy/earthy Gilfeather Turnips, is Autumn-in-a-Bowl. Warming and well-balanced, with a nice big crunch from baguette croutons.
The Carrot Apple Salad was refreshing and just the right amount of sweet. The Cinnamon Baked Apple felt like a treat, but not TOO indulgent.
But the star for me was Lucia’s take on the Ploughman’s Lunch. Never heard of it? A Ploughman’s Lunch is a classic British pub meal, usually served cold and barebones: a good piece of cheese, a hunk of bread, some nice cold meats, and a briny pickle. Just what you need before getting back to the fields.
Clover’s version is a perfect fall sandwich—a beautiful baguette, creamy dijonnaise spread, apple chutney you’ll dream about afterward, Grafton Village sharp cheddar, a bit of red onion, local arugula, and dill pickles. Good golly is this sandwich a keeper. (I’m still trying to convince Chris and the KIT team to bring it into the stores every September.)
